Pho-Potle? Seattle-Area Restaurant Debuts Build-Your-Own Bowl Concept

SEATTLE TIMES - KENT — Quyen Phan admits that the “pho-potle” nickname for his Vinason Pho Kitchen chain sounds gimmicky. But damn if that shtick didn’t go viral.
Videos of Phan’s “Chipotle but with pho” rebrand at his Kent restaurant have been viewed millions of times on TikTok. Diners have trekked to the South End from as far as Everett to check out his build-your-own-bowl concept, which debuted this past winter.
The marketing ploy is more than a nickname. It’s the latest example of an entrepreneurial Washington restaurateur taking a swing to stay afloat.
